Penne with Vodka Sauce

Yields:  6 servings

1/4 cup butter
1 medium onion, chopped
3 large garlic cloves, minced   
3 Tbsp minced parsley
1/2 tsp red pepper flakes
1/2 cup vodka
1 -  14 oz can diced tomatoes
6 oz. heavy cream
1 tsp salt
1 lb. penne pasta
6 oz. parmesan cheese, grated

Melt butter in a sauce pot over medium heat.  Add onion, garlic and parsley.  Cook until translucent.
Add red pepper flakes and vodka.  Reduce heat and simmer 2 minutes.  Add tomatoes with juice.
Increase heat to high while breaking up tomatoes.  Cook for about 5 minutes.  Stir in cream and salt.
Cook until sauce thickens (approx 5 minutes).  Toss with cooked penne and sprinkle with cheese.
