Shrimp Toast

1 lb. shrimp, peeled and deveined
1 medium onion, peeled and chopped
1 -1/2 inch slice of fresh ginger root, peeled and chopped
1/2 tsp. salt
Pepper
2 egg whites
30 strips of good thin sliced bread (1x3 inches) crust removed
1/2 fine bread crumbs
Vegetable oil for frying

In a food processor or blender process the shrimp, ionion, ginger, salt, and pepper until finely chopped. With the motor running, drop the egg whites through the feed tube, and process until mixture is well combined.Spread shrimp mixture (approx. 1/4 inch thick) on the strips of bread and dip the mixtured coated side in bread crumbs, covering well. Chill until ready to cook, shrimp side up. Cover with plastic wrap.Heat oil 1 1/2 to 2 inches deep in a large skillet. When hot (360 degrees)fry on both sides until golden brown. Drain on paper towels.

Shrimp toast may be frozen uncooked. Fry in hot oil as directed above, right from the freezer.
